Wine Tastings

Prahova wine is served in almost all restaurants. Wine Tastings are made especially on the Wine Road, around Dealu Mare and at several specialized wineries from further production area, such as in Azuga at Rhein Cellars, the supplier of the Royal House.

 

 

Main characteristics of the wine varieties grown in Prahova County:

 

  • Cabernet Sauvignon variety - This wine has a medium smell, reminding of red fruits, plus a pepper flavour with a slight tinge of black chocolate. We recommend the opening of the bottle half an hour before consumption, in order to emphasize its powerful character.

 

Wine features: The grapes of this variety are generally harvested last, when they are fully matured. The fermentation lasts on the skin up to 15 days, followed by pressing and only the first grape juice is used in the wine making process. After the fermentation process, the wine is more round and velvety. It is not kept in wood barrels.

Serving temperature: 18-20 Celsius degrees

Alcohol content: 13, 4%

Appearance: clear, dark-ruby.

 

  • Tămâioasă Românească variety - This wine has a pale yellow colour, with golden tints. Its taste is full, round; with a flavour of sugar that harmoniously completes its aroma and the strong sensations of elderflower and lemon.

Wine features: This wine is very aromatic. It is essential to stream flavours from the grapes into the wine, aromas that are present in the skin of grapes. To get the maximum of these notes, the skins of grapes are kept longer in contact with the juice of the grapes.

The process of pressing the grapes is done very slowly. It uses special natural lees, with a starting point in the fermentation at a very low temperature. Natural fermentation takes about one month to get maximum aromatic potential. It is stopped when the rest of the natural sugar reaches approx. 25 g/l, which gives the wine a unique character.

Alcohol content: 11.5%

Appearance: clear, yellow-green.

 

  • Feteasca Neagră variety - This wine has a dark-ruby red colour, a slightly spicy taste with the tight black fruit flavours collected in a lovely bouquet. We recommend opening the bottle half an hour before consumption to emphasize its powerful character.

Wine features: The grapes of this variety are generally harvested last, when they are fully matured, which gives the wine strong notes of fruit and spice (in the nose and palate). The fermentation lasts on the skin up to 15 days, followed by pressing and only the first grape juice is used in wine producing process. The next step, the fermentation, makes the wine more delicate and round. It is aged in oak barrels for 6 months.

Serving temperature: 18-20 Celsius degrees

Alcohol content: 13, 5%

Appearance: clear, dark-ruby.

 

  • Feteasca Albă variety - This wine has a pale yellow colour with a lighter flavour, a pleasant taste, aided by the addition of carbon dioxide.

Wine features: This wine is fermented with the aid of specially selected lees, in order to highlight the fruity flavours. The fermentation takes a month to finish. After the fermentation, the wine is left on the lees for 3 more months. During this interval, the wine is mixed on the lees at least once a week (process called batonnage), thus giving stability and a slight sweetness to this wine.

Serving temperature: 15 Celsius degrees

Alcohol content: 13, 3%

Appearance: clear, yellow-green.

 

  • Pinot Noir variety - This wine has a dark-ruby red colour, a slightly spicy taste with tight black fruit flavours collected in a lovely bouquet. We recommend opening the bottle half an hour before consumption to emphasize its powerful character.

Wine features: The grapes of this variety are generally first harvested from the vineyard. The fermentation lasts on the skin from 8 to 10 days, at a temperature of approx. 24-26 ⁰ C. The special lees - from Burgundy, gives the wine these notes of fruit.

Serving temperature: 18-20 Celsius degrees.

Alcohol content: 13, 5%

Appearance: clear, dark ruby.

 

  • Fumé variety- This wine is madeseparately, following a technical innovative method. It must be noted by the fine oak flavours, tropical notes of pineapple and passion fruit.

Wine features:Fumé is a coupage of Sauvignon Blanc, Riesling and FeteascaAlbă varieties. After pressing, the Sauvignon Blanc grape must of grapes was fermented in French oak barrels for 3 months and during the fermentation the lees was mixed at least once a week (process called batonnage), thus giving more stability and sweetness to this wine. The fermentation was stopped at 6 g of natural sugar content. After fermentation, the three wines were then blended.

Alcohol content: 12, 6%

Appearance: clear, yellow-green

 

  • Merlot variety- This wine is intense, persistent, with a typical and custom flavour. Rather aggressive, it requires a longer period of ageing in bottle for more round and smooth tannins. The bottle does not require a previous taste opening for full enjoyment of its bouquet.

Wine features:  The grapes are harvested at the optimum time of maturity. It uses a special selection of natural lees in order to extract maximum flavours and bouquet. The grapes are fermented on the skin between 15 and 25 days. The ageing takes place in French and Romanian oak barrels, for a period of 8 months.

Serving temperature: 18-20 Celsius degrees

Alcohol content: 14%

Appearance: clear, dark-ruby

 

  • Rosé variety - This wine is fresh, very playful with a bright colour. Has a moderate personality and acidity.

Wine features: Because the Rosé variety is made only from red wine, it is necessary for the extraction of the colour to be exactly as long as needed. After the grapes have been harvested and crushed, they are left in the tank to soak on the skin for a few hours. After being pressed, the grape must is processed as a white wine and is fermented at 12-13 ⁰ C. The fermentation can take up to 15 days.  This process is then stopped to get a small amount of residual sugar. The aromatic notes of this wine's bouquet are obtained by the addition of Busuioaca de Bohotin variety (15%) in the mass of the Pinot Noir grapes.

Serving temperature: 15 Celsius degrees

Alcohol content: 12%

Appearance: clear, rosé.

 

Other wines that can be found in the Dealu Mare vineyard are: Big Burgund, Băşicate or Beşicată, Riesling Italian, Pinot Gris, Sauvignon, Fetească Regală, Muscat Ottonel varieties.
